Brunello di Montalcino D.O.C.G. Colombaio 2017 is a premium Brunello from the Colombaio vineyard parcel of Cava d’Onice, made from 100% Sangiovese. This wine showcases the unique terroir of the Montalcino region with its distinctive mineral and fruit-forward character.
Grapes are manually harvested in early October from the prime vineyard sites. Following soft pressing and careful fermentation in concrete tanks at controlled temperatures, the wine undergoes extended maceration on the skins and malolactic fermentation. The final aging takes place in large French oak casks of varying sizes (500 to 1,500 liters), which impart elegance and complexity while preserving the wine’s natural character.
