Brunello di Montalcino D.O.C.G. Cava d’Onice 2017 is a premium Brunello made from 100% Sangiovese, the result of Simone’s determination to create a distinctive Brunello. The wine takes its name from an ancient Etruscan onyx quarry situated near the Abbey of Sant’Antimo, near Montalcino in Tuscany.
Grapes are manually harvested at the end of September and early October from carefully selected vineyards. Following soft pressing, fermentation occurs in concrete and stainless-steel tanks at controlled temperatures below 30°C. The wine undergoes a long maceration on the skins (21–28 days) and malolactic fermentation after alcoholic fermentation. The final step is aging in large French and Slavonian oak casks, which adds complexity and elegance to the wine.
