Micolore I.G.T. 2025 is a charming and approachable red wine from Cava d’Onice, named as a tribute to Simone’s two children, Micol and Lorenzo. In Tuscan dialect, “micolore” means “my color,” perfectly capturing the wine’s vibrant character. This wine is crafted as an ideal everyday table wine with fresh fruity notes and delightful persistence.
The grapes come from the estate’s younger vineyards and include a carefully selected blend of Sangiovese with international grape varieties including Merlot, Cabernet Franc, and Cabernet Sauvignon. Harvest occurs in the first and second weeks of October, with grapes manually picked at optimal ripeness. Fermentation is temperature-controlled at below 25°C for approximately 7 days, followed by maceration on the skins for about 12 days.
The wine is aged in a combination of concrete tanks for part of the vinification, with the remainder aged in nearly exhausted French barriques, imparting subtle oak influence without overpowering the wine’s natural fruit-forward character.
